Step 1 Rinse the beef tritip under water and pat it dry with paper towels.
Step 2 Use a food brush to brush the tritip with the olive oil.
Step 3 Season the tritip with the salt and pepper spices. Let it rest for 30 mins on your kitchen counter.
Step 4 Preheat your gas grill, turning on all four burners, 15 mins into the tritip's rest time.
Step 5 Place the tritip on the left side of your grill, meat side down, fatty side up. Close the grill's lid and grill for 3 mins.
Step 6 Open the grill's lid, turn the tritip over, fatty side down, meat side up. Close the grill's lid and grill on this side for 3 mins as well.
Step 7 Leave the grill's lid closed. Turn the two leftmost burners off to continue the grilling on indirect heat, with only the two rightmost burners continuing to fire. Grill for another 12.5 mins per pound of tritip, e.g. 12.5 mins x 3.3 lbs works out to about 41 mins more grill time with the grill's lid closed.
Step 8 Open the grill's lid after the calculated time. Transfer the tritip to a plate and let it rest for 10 mins before slicing it to serve.
